Global 5-Piece Knife Set with Storage Dock Review

Global 5-Piece Knife Set with Storage Dock

These have got to be the sweetest knives I have ever used. I used to use a Henckle chef knife, but it doesn't hold a candle to the Global.
I only have two beefs with these knives:
1) They are so sharp that they can leave deep gouges in your cutting board if you are careless (especially the serrated while cutting bread).
2) The knive handle is more difficult to dry because its dimples like to retain water. When it is wet it can create an unusual tactile sensation in your hand.
These are minor things though. The bottom line is that the knives make cutting and chopping a pleasure.
And they look cool too!

Loved by professional chefs, Global knives are an excellent choice for the serious home cook. The razor sharp blades are forged in Japan from CROMOVA 18 stainless steel, which holds its edge longer than any other steel.Global knives are sharpened further up the edge of the blade than German-style knives, creating a straight edge- in fact two or three times more surface area is sharpened on a Global knife.Lightweight in your hand, the knives offer superior control and precision.Inspired by the crafting of ancient samurai swords, each knife is carefully weighted for perfect balance and comfort. The smooth contours and seamless construction prevent food and dirt particles from collecting on the knife. Gorgeous modern design includes a textured handle for a secure grip. These knives have remarkably sharp, flexible blades that have been ice-tempered and hardened to meet stringent standards - perfect for slicing bread, carving meat or peeling vegetables. MAC MTH-80 8" Chef's Knife w/ Dimples Review

MAC MTH-80 8 Chef's Knife w/ Dimples

My wife and I have been using Henkels knives for some time, but were looking to switch to Japanese steel knives for the superior hardness and sharpness of the blades. We were very drawn to Kershaw Shun for both the beautiful look (who doesn't like Damascus steel?) and strong reputation and reviews. That kind of ended when we actually picked them up. The several Shun knives we tried were just too heavy and large-handled for me and particularly my wife's hands. We took a look at Global and liked the sharpness, but they seemed a bit too light for our tastes, as well as seeming like they might get slippery when wet with the metal handle. I'd read good things about MAC, but didn't have a local dealer. On a trip to Chicago, we finally got a chance to handle these and found the weight and balance to be perfect for our hands. We bought a few and have been overwhelmingly happy with them. While they may be fairly utilitarian in appearance, they're perfect workhorses in the kitchen. In addition to the perfect handles for medium to smaller hands, the thinner Japanese steel cuts through tougher vegetables (potatoes, carrots, etc) with less resistance than thicker blades. They hold their edge incredibly well with only occasional ceramic steeling. I have taken the time to put them across a couple Norton Arkansas stones and have been able to bring out a new degree of sharpness that has increased our satisfaction even further. Highly highly recommended.

Global G-16 10-Inch Chef's Knife Review

I actually bought this knife locally and compared with the 8.25" GF-33, 10.5" GF-34 and 11" G-17 without knowing the size of each (they were pulled bare from a display case.) This forced me to pick the knife that actually felt best in my hands. I already own the 6.25" chef's knife so the 8.25 was out. The two bigger knives felt, well, too big and heavy. The 10" felt just right when held properly - thumb and forefinger on the aft most portion of the blade (just ahead of the handle.) The long slender profile really works in a knife of this length. It makes it feel more manageable without sacrificing the strengthes. The strengthes are of course more "rocking" length and more momentum when slicing. You cut right through an onion with minimal effort. If I were starting all over I'd skip the 6.25 and go straight for the 10. That being said, you really should hold a knife before you buy it since personal preference means everything.

Global G-2 8-Inch 20cm Cook's Knife Review

This is one of the first global knives I bought. I loved it the first time I held it in my hands. What impressed me most was the perfect balance, the lightweight, and the sharpness. However, what may be perfect for me may not be perfect for you. I'd recommend anyone who is shopping for cutlery to go to a store and try how the knife feels in your hands before buying. And if you can borrow from a friend to try, that's even better.
Having used this knife for several years now, my initial impressions haven't changed. This is still my favorite knife for most tasks. I maintain it regularly with a steel and it is as sharp as it ever was. I have found though that for certain tasks like cutting slits into an onion for dicing or cutting root vegetables, I do prefer a heavier knife (that's why I bought another forged global knife), but that is just personal preference. All in all, a great general purpose kitchen knife.

My Global has been slicing bread for three years now and guests still comment that it's "a really sharp knife". A low-carb disbeliever, and living near Seattle bakeries that are serious about their product, I eat lots of bread. Much mileage on the knife and it still melts through hard-crust Toscano Loaves like they were Wonderbread. Two more of these knives have been purchased for wedding gifts. Followup shows that the newlywed recipients didn't know that there were special knives just for cutting bread and are using this wonderful knife for cutting up everything. And love it.
