The knife edge has a very pronounced curve, the 'belly' of the knife doesn't transition to a straightened out 'edge' before ending up at the 'bolster'. This may be a great feature if you rock the knife alot mincing herbs and vegetables, but I personally prefer a more traditional chef's knife profile where the 'edge' of the knife is more flat creating a longer cutting edge that is actually in contact with the board. When you place the edge of the "Ultimate Cook's" knife against the cutting board, you will see that at any angle, very little of the knife's edge is in contact with the board.
What I noticed when quickly slicing, dicing, and chopping various vegetables (green onions, bell peppers in my case), was that I was not completely slicing through items that were closer to me. Because of the continuous curve of the 'edge', items closer to the bolster weren't getting cut completely. You really have to adjust your slicing motion to account for part of the blade / edge that you might say is missing from a traditional chef's knife or santoku.
Bottom line, I am happier with the 8" Shun Steel Chef's Knife. The U-Cook's knife is beautiful, sharp and well made, but it did seem a little blade heavy. The serrations on the U-Cooks seemed like a great idea, but when you have a razor sharp Chef's knife you don't really need them.

I should've listened to the previous reviewer. I'm not sure how these bowls are normally measured, but even though it claims a 6-quart capacity, in my tests using a liquid measuring cup, this bowl only holds up to 19 cups (4.75 quarts) before spilling over, which of course is an impractical level to fill a bowl. So 4 quarts is probably more accurate, and even then I'd be worried about mixing stuff over the edge depending on what's in it.
In spite of this, I've happily used it to mix dough and fillings, and as part of a makeshift double boiler with a 3qt pot. It's a sturdy stainless steel mixing bowl with a flat bottom and a brushed metal appearance, nothing special. It doesn't have a rubber bottom like some brands, but you can always put a rubber mat or damp kitchen towel under it if that bothers you. Just make sure you aren't actually planning on putting more than a gallon of stuff in it at one time.

These rings fit on a 1" rolling pin and as well stretch to fit a 3" rolling pin (the ad claims up to 4"- but that would be stretching it a bit.) The stretchiness means that the bigger in diameter your rolling pin- the thinner the dough for a given set of rings.
These rings only produce accurate thickness results as stated in the ad if used on on a 1" diameter rolling pin.
The dimensions stated in the ad are Set of 4 pairs: 1/16" (red), 1/8" (yellow), 1/4" (green), and 3/8" (blue) thicknesses.
On anything over a 1" rolling pin, they produce uniform sheets of dough- but not at the thickness indicated on the bag. On my 3" rolling pin the yellow rings gave me a hair under 1/16" -not the 1/8" you might expect from the ad.
Luckily all i needed these for was "additional" thickness for my 3" pin which already had a couple of older rings on them (I stacked the rings).
I can now turn out a neat 3/32" cracker without too much problem.
Also seems a bit pricey for what are essentially large elastic bands- but then I couldn't find what I needed anywhere else!

Just a quick note, this is an almost instant read thermometer. On average, it takes between 2-4 seconds for a final accurate reading. However, DO NOT TURN IT ON UNTIL YOU HAVE IT INSERTED. I read plenty of reviews stating it takes 30 seconds to record. If you turn it on, it will start at the temperature of the room and crawl up slowly (usually only a few degrees at time). This will be quite frustrating and useless.
Remember, insert it, then turn it on...and BINGO, you are in business.

Folks, take a look at the price of the Shun bread knife. Now realize that that the same company makes this knife in the same way and the price become even better. The same scalloped shape as the Shun is offered in the Seki Magoroku line. The quality in this line is even higher than the Wasabi line.
I think the reason people may not go for these knives is that the handles are wood. That means that the handles shouldn't get very wet and the knives must be washed by hand. Unless you're cutting a bunch of wet bread, I don't see how this should be a problem.
