After mixing your dough and letting it rise the first time, this basket helps shape the dough into a perfect loaf, with an interesting pattern on the crust. My first loaf with this basket turned out perfectly. It is much easier than hand shaping a loaf, and much more rustic/natural than using a loaf pan. The natural coils shape and decorate the loaf the old-fashioned way. When it's done rising, carefully remove it from the basket and care fully put it on a pre-heated bread stone in the oven. The loaves look and taste great. this particular basket shape is great for making sandwich bread. I make almost all of my bread with one of these woven baskets. It is so convenient, and the bread lookks and tastes great.

This bread proofing basket is a winner because:
*Delivery was swift
*Basket is well-constructed and of good quality
*Cane's imprint on the bread is a perfect artisanal touch
Heavily flour the interior (bottom and sides) of your basket each time you use it and do not wash it. Simply tap out any excess flour after each use and store it in something that can seal (ex: plastic grocery bag).
The only problem I encountered was not the fault of the basket. I also bought an oblong bread cloche (see my review) and its width is smaller than this oblong proofing basket, making it difficult to get the proofed bread into it. Next time I will try to bake it on a pan (without the bottom of the cloche set) using only the clay top. The proofing basket and the cloche set are not from the same manufacturer. It would be nice if both products conformed to the same shape...
The final product (baked bread) `proofed' this basket to be a winner.
