J.A. Henckels International Forged Premio 18-Piece Block Set Review

J.A. Henckels International Forged Premio 18-Piece Block Set
Average Reviews:

(More customer reviews)
I had been looking to purchase a nicer, but not overly expensive, set of knives as my older set had seen better days. i bought these despite the lack of reviews, and after using them for a couple of weeks i love them. they have a wonderful feel in your hand, nice and heavy for their size, extremely sturdy. they are very sharp right out of the box with a sharpening steel that works well. the steak knives are great, they are clean, black, and professional looking and would definitely fit in with any nice set of china or flatware.
the only thing i can think to say is that the paring knife is a little awkward, the grip almost feels too big, or perhaps the blade is too small, but that my just be me. overall a great set of knives for someone who wants quality, reliable cutlery without spending 500+ dollars. i intend on using this set for quite some time into the future.

Tramontina Professional Series Cutlery Set with Block 7-pc. Review

Tramontina Professional Series Cutlery Set with Block 7-pc.
Average Reviews:

(More customer reviews)
I've had this knife set for 5 years and I still love it. The knives more than hold their own against much more expensive ones, and are immensely well suited for serious prep work. True story: I took the chef's knife to a "knife skills" cooking class at the local culinary school, and the teacher absentmindedly picked it up and began using it instead of her (fabulous and expensive) Wustoff model. After she used my knife for several demonstrations she realized her mistake and remarked how much she liked using it. When I told her how inexpensive it was, she was stunned. As with any good knives, you do need to take care of these by using the steel regularly to maintain the edge, and they should be professionally sharpened every year or two. Also, they should be washed by hand (soak them for a few minutes in hot soapy water, and they'll clean right up). You simply can't do better for the money with these knives and I wouldn't trade them for anything.

Henckels Premio 14-pc. Metal Cap Knife Set Review

Henckels Premio 14-pc. Metal Cap Knife Set
Average Reviews:

(More customer reviews)
Bought these because I needed something after I took a 3 month temp job and didn't want to move a lot of stuff. The knives are nicely balanced, but heavy - if you like a light weight set these are not for you. Their ability to remain sharp is in question - I have to use the steel pretty much every other use. In fairness- this is their recommended interval on the instructions but it would seem that they should hold an edge for longer than that. Two disappointments - they stain easily and often, tomatoes leave a noticeable stain that takes some work with a scouring pad to remove. Unless you wipe them immediately after use it will leave a mark. I haven't put them in the dishwasher - they're always hand cleaned but I'd be really reluctant to try the dishwasher after the staining issues I've had in normal use. The second is that although they're touted as being made from "Genuine Solingen Steel" (it was printed on at least one of the packages) they're in fact made in China.

Zwilling J.A. Henckels Four Star 8-Piece Knife Set with Block Review

Zwilling J.A. Henckels Four Star 8-Piece Knife Set with Block
Average Reviews:

This is the 3rd set of Henckels I've owned. I sent the first set to the local cutlery store for sharpening and they came back with a different personality. Didn't cut like Henckels anymore. Really disappointed. In search of a replacement set, I got the lower end Twin Signature 11pcs set. It was stamped, not forged. They cut well, but the knife felt cheap compared with the real forged Henckels.
I am really satisfied with this Four Star set. Feels solid, even weight distribution from front to back, and cuts like butter. My friend has a set of Twin Crusine which is so well built that ended up being too heavy in the back. Feels like I am just about to lose control and dropped the knife. Gives me the insecure feeling that I might cut myself trying to overcome the Twin Crusine under control.
One thing I learn this time.... make good use of the sharpening steel. I finally got the courage to learn how to use the sharpening steel with the correct angle and position, it worked so well. Sharpen my other Henckles knife back to nearly new condition.

After revewing knife sets and checking CR recommendations I decided to purchase this set. CR said that Chicago cutlery was the way to go if you do not want to spend a small fortune on knifes that were still of decent quality.
This is the first time I buy something that did not have a review and the first time I write a review because I was so upset with the quality. The knife are not sharp, and they rust - and the block is cumbersome and the inserts that hold the knifes come out - it was actually missing one when it arrived.
I hastened to open it and set it up before I noticed, otherwise, if I still had the box, I would have returned it.

Wusthof Classic Ikon 8-Piece Block Set Review

Wusthof Classic Ikon 8-Piece Block Set
Average Reviews:

For some time I wanted some really good chefs quality knives. After doing quite a bit of research and holding several different knives in upscale stores, I settled on the Wusthof Ikon Creme - and I'm very glad I did. These knives are super sharp, well balanced, and great looking. There are three different handles available in the Wusthof Ikon knives, and I chose the Creme as a personal preference.
My advice is to hold several top quality knives like these in your hand. You will notice the difference in quality in different kinds of Wusthof, Henckels, and other top name knives. You can then decide for yourself.
These knives are fantastic and will be used in my kitchen for a very long time.

Create culinary masterpieces in your home with this 8-piece set of professional-quality Wusthof Classic Ikon knives, featuring an innovative handle design in off-white This 8-piece block set includes a 3-1/2-inch parer, 4-1/2-inch utility, 6-inch sandwich knife, 8-inch bread knife, 8-inch chef knife, 10-inch sharpening steel, and kitchen shears as well as a 17-slot walnut wood storage block.
A culmination of all the best features of each of the Wusthof knife lines, the Wusthof Classic Ikon line features blades that are precision-forged from one solid piece of steel and tempered to optimum sharpness. The Classic Ikon adds a rear bolster that acts as a counter balance when using the knife, which adds significant blade control. Classic Ikon also has a unique forward bolster, which is designed so you can sharpen the complete length of the blade. This bolster is also curvered inwards to allow your fingers greater control while holding the knife by the blade. A full tang extends through the handle for perfect balance and handling, and the riveted creme handle design has a contoured shape to add comfort and control.
Made in Solingen, Germany--The Cutlery Capital of the World--Wusthof knives are made from a special blend of German steel and each blade is precisely tempered, which allows the knife to hold its edge for an extremely long time, yet still be able to be maintained in your home kitchen without the need to be sent away for maintenance. Wusthof also employs a unique compound angle that tapers from the spine of the knife to the edge to allow for a sturdy, yet extremely sharp edge.
Generally, the construction technique and the materials used to manufacture make all Wusthof knives dishwasher safe, but handwashing is recommended. Wash your knives with warm water and a little detergent, rinse carefully and dry with a towel. Corrosive food particles will not affect your blade if washed off directly after use. Backed by a lifetime warranty.

Although very sharp out of the box, these knives have nothing in common with the products one expects from Henckels. The editorial review says the steel is not of the same quality. Well, there is a lot less of it as well. The knives are extremely light weight and there is quite a bit if flex in the blades if you are cutting anything more tenacious than veggies. The block and steel are fine and the set is probably an decent value for the money - but that is about it.

Gunter Wilhelm Cutlery 250 Executive Chef 12-Piece Professional Knife Set with Wooden Storage Block Review

Gunter Wilhelm Cutlery 250 Executive Chef 12-Piece Professional Knife Set with Wooden Storage Block
Average Reviews:

(More customer reviews)
I purchased these knives at Costco for a screaming deal. The entire 12 piece knife set was $279 and the add-on 7 piece steak knife set was an additional $75. This includes:
* Carving Fork
* 10" Meat Carving slicer w/dimples
* 9" Offset Bread knife
* 10" Chef Knife
* 10" Boning Knife
* Butcher's Cleaver
* 7" Asian Cleaver with dimples
* 7" Santoku with dimples
* 3.5" Paring Knife
* 10" Diamond Steel
* 10" honing steel
* 6 Steak knives
* 2 Wooden Knife Blocks
They are made of German forged 440C steel at a Rockwell hardness rating above that of the comparable Henckels and Wusthof, which means it will hold a sharp edge longer than those brands.
I was skeptical at first but after handling them and actually trying them out in the store, I was convinced it was a great deal. Plus, Gunter Wilhelm has a 30 day money back guarantee and Costco has a lifetime money back guarantee, so how could I go wrong?
Other than these knives being higher in quality than the competition, and other than them being a lot cheaper than the competition, I was also sold on the fact that Gunter Wilhelm has a *lifetime* guarantee on their knives. Should one break, crack, bend, chip, split, etc. in the lifetime that you own it, they will send you a new one FREE of charge, EVEN IF IT'S YOUR OWN FAULT. Now how can you beat THAT?
I've used the knives for about 3 weeks now and look forward to every time I pull one of these knives out of the block. They feel great in your hands, are razor sharp, are well balanced and are a joy to use. Just be careful, because they really are razor sharp. I barely (accidentally) brushed up against one of the blades and instantly drew blood.
To keep them razor sharp, use the honing steel prior to use every time. Just a few passes on each side will suffice.
As for customer service, I've called twice so far with questions about the knives and to state that I love them. Never was anyone rude to me like the other reviewer here has written. Don't believe him. It's a quality company with a quality product and I'm so glad I made the decision to purchase these knives.
I'd recommend them to anyone seeking a quality knife set.

Equally suited for an at-home cook as for a professional chef, this 12-piece knife set makes a useful addition to any busy kitchen. The high-quality knives feature precision-forged blades made of 440C German steel--a combination alloy made of high-carbon steel and stainless steel that sharpens easily, holds a razor-sharp cutting edge, and resists staining. Plus, the knives come sharpened all the way to the base of the blade where most cutting occurs, and their attractive Pakkawood triple-tang handles provide superior balance and an ergonomic grip for exceptional comfort and control. The set includes a 10-inch chef knife, a paring knife, a Santoku knife, an offset bread knife, and an Asian cleaver, as well as a 10-inch pointer slicer, a carving fork, a boning/fillet knife, a butcher's cleaver, and two sharpening steels (a 10-inch diamond steel and a 10-inch honing steel) that help keep the blades in good working order. Even more, the set provides a large wooden block that not only showcases the collection, but also safely and securely stores the knives when not in use. Using the knives on bamboo cutting boards works the best since bamboo won't warp, crack, or split, and it's naturally anti-bacterial. To clean, hand wash the knives with warm water and a mild detergent, then rinse and dry immediately. The 12-piece knife set measures approximately 12 by 6 by 17 inches and carries a lifetime warranty.

Oneida 13pc Side Tang Knife Block Set Review

Oneida 13pc Side Tang Knife Block Set
Average Reviews:

(More customer reviews)
I've examined more than 15 knife sets at this price range, both in stores and at home. I like this set the most in the under $100 price range. I'm not a five-star kind of reviewer, but all-in-all, this set deserves it.
Firstly I want to say to the zillions of rust-complainers on the internet, that ALL KNIVES RUST IF YOU TREAT THEM IMPROPERLY. Have some knife-respect and wash & dry knives promptly.
PROS:
1. Quality:
Unlike most sets at this price range, these knives are NOT hollow, light, slippery or flimsy. There is nothing worse than so-called "nice" knives from "good" companies or "respected" celebrity chefs, that STILL feel cheapy.
I previously had the Henckel's International Synergy set ($60), and the feel of this set is much better. For only $12 dollars more this set is on another level. These knives have a HAND-FEEL better than many...and I mean many, high priced sets.
These knives are solid; even heavy, and the blades are nice and long. I'm telling you, if you're someone who respects feel and integrity in his tools, you'll be down with these knives. Way down. Like, lowdown.
2. Handle Length:
For some reason most steak knives have inexplicably short handles. These handles are longer and extend properly into the palm. If you're a steak guy, you know what I mean. Don't ask me to cut my steak with a Kewpie doll knife. The other knives in this set have longer handles as well. I'm sick of dainty handles. Even Chicago Cutlery, with its big macho sounding name, give you the typical stubby handles.
Another advantage of these longer handles, is that when cutting, your index finger rests more on the comfortable bolster, than the sharp back of the blade. These are well thought-out knives.3. Handle Texture:
Some knives are too slick, some too grippy. I don't know what kind of material the handles are (Onieda calls it POM), but the grip is just right. PERFECT in fact. You don't want rubbery, which feels a bit cheepy-cheesy, and lacks class, and you don't want too slick a steel.
Many knife handles, even expensive ones, are often some kind of hard plastic or graphite. Even top quality plastic feels...well, like plastic. These Oneida's feel nothing like that.
Also some sets have handles that are flat and some that are round; without going into it, I don't care for either. This set strikes the right shape; sort of a curved square.
4. Sharp Enough:
I'm not going to tell you that these blades are the best. This is not an expensive set. They're plenty sharp.
Web reviewers that get all frazzled because their new knives are "DULL!", are most likely starting their cut like a clutz. Yes, I've experienced un-sharp knives right out of the box too...these ain't them.
These blades are straight-edged (smooth), not serrated (jagged). Personally I like smooth edged like these. If you keep it sharp, it slices like silk, and your guests will exclaim, "wow, THAT'S a steak knife". Serrated edges are OK, but when they get dull they start to tear at meat, rather than slice it smooth and sexy like.
Serrated are also harder to sharpen.5. Blade Strength:
The blades are a bit stronger than most. They are not flimsy, which is a common problem at this range.
Mind you, they are not super rigid like some $200+ set, but they will NOT embarrass you. These are high carbon stainless steel after all.
I test blades for strength and rigidity by gripping the handle with one hand, and pinching the blade tip with the other hand, then flexing the blade from side to side, observing the amount of wiggle. Again, these pass the wiggle test just fine.6. Blade Length:
All but one of the knives complies with recommended lengths. Often you will get a short santoku knife. Not here, it is the full 7 inches. The chef's knife is a big mother. Put the chef's knife in one hand and the santoku in the other and go to war. 7. Value:
For quality, weighty knives like this, it's a good deal indeed.9. Appearances:
It looks like a proper knife block set. Others may like something prettier. The trim on the block is a bit course maybe. As for the knives, I like that they are rivetless, with the steel traveling seamlessly from the blade to the bolster and on through the handle. Sleek and solid looking. And no place for gunk to hide.
Also the block has a small footprint, so if you have a small counter it works out.
Knife block slots are labelled. Kinda neat. One tends to get sloppy with slots. This keeps you honest.10. No Rust:
So far no rust, and I've no reason to think it will. If they do start to rust, even though I care for them properly, I will be certain to update this review in BIG FAT LETTERS. CONS:
1. By tradition and expert recommendation, pairing knives should be 3.5 to 4 inches. This one is only 3 inches. Bummer. That half-inch makes a difference. A good pairing knife may be the most important knife in a kitchen, so this was a real shortcoming on Oneida's part. I have a favorite paring knife, so I just substituted mine for theirs in the pairing slot. But still, one shouldn't have too. It's a waste of a tool and some bucks. I guess it's OK for grapes, whatever.
2. No sharpening steel. Truly, any self-respecting block set (like this one certainly is) SHOULD have a sharpening steel. It's just what's done. It's kinda like selling a pair of shoes without the laces.
3. Block: The steak knife slots are narrowly aligned, so the steak knives are bunched together rather untidily. Knives should line up military straight. Well, as mentioned before, the block itself lacks a bit of fit & finish.
The block is at a medium to slight angle. To access the longer knives you may have to pull it out from under a cabinet. But it will STORE under all but the most low slung cabinetry. It could have been a bit more angled.
4. Kitchen shears (scissors): Personally I don't like the look of scissors in my knife block. Scissor's should be kept in your wife's knitting drawer. I'd rather Oneida have supplied another type of knife instead of these shears. No big deal. I just stuck another pairing knife in the shears slot, and put the shears in a drawer. Now I'm all cool again. SUMMARY:
This is simply the best knife block set at this price range, period.

Chicago Cutlery Classic Chef 14-Piece Knife Block Set Review

Chicago Cutlery Classic Chef 14-Piece Knife Block Set
Average Reviews:

(More customer reviews)
Years of trusting Chicago Cutlery went down the drain with this purchase.
How the company could risk its reputation for quality by putting out such a poor product is beyond me.
The wood knife holder is fine. The handles are smooth and well finished. The knife blades are a complete and total disaster. The so-called "STAINLESS" steel is really a poor quality carbon steel. I have the distinct feeling that my set was unfinished, as the serrated edges were so rough that slicing meats or even a tomato ended up with a tearing of the food. I finally used a sharpener to take the unfinished edges down a little. That worked, but seems dumb that they came out of the factory unfinished.
The blades are very heavy whch may seem like a feature, but because the serrations are only on one side, when you try to cut, the angle of the blade edge causes the blade to turn , and prevents even cuts.
The worst part, is the rust. I note that after I bought the item, the term "hand wash" was added to the descriptive copy. Even hand washing and drying did not prevent rust, and then of course, if the rust is allowed to remain for any time... pitting takes place.
My wife bought the set at Christmas from Kmart... supposedly a $59.95 value for $29.95. Hey... I was happy... a set of Chicago, at a great price. Not to be... I have thrown away the original box, but don't recall anything on the box or the descriptive card that was included that said the set was imported from China. Usually, when this is the case, the words "made in China" are imbedded in the blade. Not so. The blade has only the embossed "Chicago" brand.
I used to work near the Chicago headquarters, and knew some of the workers, who had pride in their product. That was then, this is now...
They say you get what you pay for. In this case, I must tell you that I bought a similar set for our cabin, with a few less steak knives, but the same basic carving knives... no wood knife holder but a nice wood cutting board. The set doesn't rust, cuts better, and the best part is that it had a day in, day out price of a flat $8.00. The stamped brand was "Gourmet Traditions", and the "made in China" stamp WAS on the blade.
We gave our "Classic" set away to Goodwill, with a warning that it wasn't worth more than $5-8.00
"Chicago Cutlery" made an enemy of me... You can only trade on a magnificent reputation 'til your old customers catch on.

I bought another set of Henckel knives 25 years ago and have decided to get a new set. This is not because the others didn't work, they did. I lost my paring knife and decided to treat myself to a whole new set. The Forged Premio set is just what I was looking for. They feel great, cut great, are a good price and they are well made. I love them. Henckels is a fabulous company. I broke the point off of my old paring knife, sent it back to the company and they sent me a brand new one, no charge. You can't go wrong with that. I highly recommend these knives and this company.

These knives are exactly what I was looking for. I don't cook frequently, but wanted to have reliable cutlery for when I do. This set is more than up to the task. I have every type of knife I would need, and it's great to have a nice set of steak knives. Be aware, there are not enough slots in this block for both santoku knives. I have to keep one in a drawer.

Messermeister Meridian Elite 7-Piece Knife Block Set Review

when it comes to engineering the germans have always come out on top
so when when choosing a knife set it came down to henckle, wusthof and
messermeister all worthy contenders steeped in a rich tradition of forged
steel knife making since the early 1800's. what ultimately impressed me
with messermeister was that they did not compromise their reputation by
outsourcing their product to international knife making markets outside
of germany in order to gain popularity.
the 7pce. meridian elite block set will not only compliment any kitchen
with it's subtle elegance but when called upon will perform with precision
and ease

Having the right tools breeds security in the kitchen. These Japanese-style cook's knives are specialized for their dexterity in chopping, dicing, and slicing. The 8-piece set includes the following knives: 3-1/2-inch paring, 5-inch utility, 5-inch serrated, 7-inch santoku, and an 8-inch chef's. Rounding out the set is a pair of kitchen shears, sharpening rod, and bamboo storage block. Rust-resistant stainless-steel blades hold an incredibly sharp edge. Traditional-style rounded Japanese handles are made of heat- and water-resistant resin, and they feature a full tang. As with all fine cutlery, hand washing is best for care.
What's in the Box? 8 pieces: 3-1/2-inch paring, 5-inch utility, 5-inch serrated, 7-inch santoku, 8-inch chef's, shears, sharpening rod, and bamboo storage block.
