I absolutely love Doughmaker's products! I first purchased their cookie sheets and a cake pan through a home party company. I have had more success baking with these products than any other, and I have owned a lot. I recently added to my collection by purchasing these bread pans and I was not disappointed. Breads I baked in my old dark and medium colored pans tended to brown too much on the outside and not completely cook on the inside. Not so with the Doughmaker's pans! You may have seen sheets like these on cooking shows or at fancy stores under the Silpat name selling for huge sums of money and were discouraged. Well, let me end any confusion and tell you that these work the same way! They are like having permanent non-stick surfaces for baking, roasting, and even candy making. You may be a bit scared to put this plastic looking sheet into the oven at first, but don't worry, as your food would be charred before it would ever melt.
You may have been very frustrated by candy making in the past because the hot sugar would stick to anything that wasn't caked in non-stick spray. Fear no more, as this slippery wonder is a great working surface for kneading it while it's still hot or after it has cooled. If you want to keep it malleable for a longer period of time, set up a small heat lamp over the work surface.
What about cookies? I was shocked with how well they baked. Needless to say, nothing sticks (I was even able to just pick the sheet up and slide them onto a plate), but the surface also helped for even heating of the bottoms in our wonky oven that normally burns them. This was the most even browning I've ever seen, and required less effort than normal. It makes me much less nervous about putting baked goods into the oven. The downside is that cookies that rely on an ungreased cookie sheet to maintain proper form will spread on these sheets in a manner similar to a baking sheet sprayed with Pam. Fortunately, those cookies are typically laden with butter and do not stick anyway.
A bonus feature is that you can place this on a cookie sheet underneath a pie that might boil over in the oven. This can save hours of cleanup for those messy pastries.
Then comes the cleaning of the mat. All you do is rinse it with warm soapy water, as I've never seen anything actually stuck to it. It can tend to feel a bit slimy, but that's just the nature of the material. Storage is very convenient as well, as you can roll it up and even stick it in your silverware drawer!
I really have no reason not to recommend this product. It saves time, is cheaper than less effective sprays, and is convenient. I wouldn't cook without one... or two.

These are very lightweight, poorly constructed pans. one of the round ones was so thin, that it has holes right through at the bend between the side wall and the bottom. I did not even bother to return because they were so cheap. I would not recommend them to anyone.

I bought a burgundy-red version of this set in a home & garden specialty store when I was last in Washington, D.C. in just February of this year. I have gotten into cooking bread, so the loaf pan has been used almost weekly since its purchase.
The first thing I noticed was the blackening of the silicone pan edges. Can't get that off, but I supposed that is to be expected with regular baking. The more critical issue, however, is that it seems to have been the signal of bigger trouble. First the right lip fell away and now the left. And it gave up holding its upright loaf shape well before that (presumably because "ultra-flex" is code for "much too thin"). I don't mind the bowed bread (we eat it anyway), but when I came across a used silicone bread pan from another brand and compared the results, I couldn't help but find this one inferior.
I cannot recommend this item for regular use.

I purchased this wanting something easy to use for baking, it is great for making small corn bread or other specialty bread. I really like it for what I use it for. It takes a little getting used to as it is a not very solid and I put it in a small cake pan when I am baking with it. The bread comes out easy and it is very clean up.

I got the Wilton set, with muffin pan, cake pan, loaf pan. The first time I used it, the smell from the oven was overwhelmingly sickening, very chemical. I thought it was because I hadn't washed it first. After washing, it was the same. As soon as it heats up in the oven, it starts to STINK. SO I did some searching on the internet - quickly found out that you really want silicone bakeware that is 100% silicone. Cheaper brands use plastic fillers which causes the odor during baking. Turns out you can tell easily by twisting a bit of the silicone - if it turns whitish, it's got plastic fillers. Pure silicone will retain it's color. The Wilton immediately turns whitish when twisted. The smell while it's hot is just nasty. I'll be returning these today - I may exchange for a higher quality and give silicone another chance. ALSO - note that silicone is NOT non-stick - it is stick resistant but the manufacturers all still recommend greasing. Wilton says it clearly on their website.

I bought this to use for gluten-free bread, the almond-meal recipe from the Elana's Pantry blog (which is a great recipe, and she has one book out and another coming- highly recommend). It works well for this purpose. The thing about silicone is that it bends, so as the bread bakes, it does yield a bit to the rising. You get a bit of a pot-bellied loaf. If you want a loaf with super straight sides, get a metal pan. I'm pretty happy with this. I can wait about 5 minutes after taking the loaf out of the oven and flip it out of the pan without problem. The more carbs and less oil there is in the recipe, the more issues I have with sticking. I've learned that anything with chocolate chips (mini or regular) sticks to my silicone bakeware. In such cases, I really let everything cool to room temperature (let the sugar solidify) before trying to remove the baked item.
