Simac MX700 PastaMatic Pasta Maker Review

Simac MX700 PastaMatic Pasta Maker
Average Reviews:

(More customer reviews)
Having read all of the reviews of the machine, it strikes me that people who have had trouble are probably not used to making things that require a level of attention. Making pasta is not like using a breadmaker. You can't just put all of the ingredients in the machine and walk away. Having used a CTC Pasta Express for years and being generally satisfied with it, I wasn't in the market for a machine as expensive as the Simac. But as an earlier reviewed observed, a large mail order company was selling it for 119 dollars including shipping. I decided to give it a try.
The PastaMatic 700MX operates differently than most models. For one thing, you have to weigh your flour and carefully measure the egg mixture(I use Egg Beaters). It takes longer to knead than my CTC too.
BUT...it makes the best pasta I have ever tried. The strands are much thinner than the CTC and a short dip in boiling water produces a superior pasta. I have purchased additional dies from Lello and look forward to trying them. The complaint about not being able to use 100% semolina is a recognition that that flour alone is just too dense and coarse for an extruder. No electric machine recommends using 100% semolina. But you can use a mixture of semolina and durum flour, which is a finer grind of semolina.
As for the cleanup, I was expecting all kinds of problems but it really wasn't any more difficult than any other appliance. Let it sit for an hour or so and the remaining dough will harden and be much easier to remove.
In short, I really like this machine! It takes time to make it work but that is time well spent.

Mario Batali Panini Grill and Press, Persimmon Review

Mario Batali Panini Grill and Press, Persimmon
Average Reviews:

I received this pan today and I love it. It made two fantastic sandwiches in less than 5 minutes. The bread was crispy and had nice dark grill marks without being burnt. The lid is heavy enough to compress the sandwich without any additional pressing.

If you have a large family this pan might be a little small. I made two large sandwiches (approx 4 by 8 inches) with focaccia bread and had room for maybe one more sandwich.
This pan was very simple to clean as well. Cheese that melted in the interior of the pan easily released after soaking in warm water for 5 minutes.
The exterior of the pan is enameled, as the description states. However, the interior of the pan appears to be seasoned cast iron, not enamel as is reflected in the description. This in no way detracts from the functionality of the pan. I prefer the cast iron to the enamel. Properly seasoned cast iron is more non-stick than enamel.
I would highly recommend this pan to anyone that wants to make panini but doesn't want another appliance to sit on the counter.

A versatile performer, this panini grill and press set in persimmon from Mario Batali is perfect for grilling Italian panini sandwiches made thin and crisp with the heavy press/lid as well as searing steaks, chicken and fish filets. The pan's cast iron core guarantees even heat distribution, so your food won't burn, and it's been given a matte enamel coating on the interior of the pan that requires no seasoning or special care. Oils used and created when cooking penetrate the pores of the matte enamel to create a natural, smooth, nonstick surface, which provides easy food release and quick cleanup. The grilling surface measures 11 by 11 inches. The heavy lid is accented with a cast stainless steel knob, and it's further complemented by a helper handle for easy lifting and transport to the table. Safe for gas, electric and ceramic-top ranges. Hand wash only. Backed by a limited lifetime warranty.
Joining forces with Copco, a leading manufacturer of kitchenware products, famed restauranteur, cookbook author and Food Network personality Mario Batali has created The Italian Kitchen--a unique line of cast iron cookware, kitchen tools and serveware. Each item includes new features that modernize traditional cooking tools and are sure to be a help to anyone in the kitchen, from novices to the most seasoned cooks.

Wasabi Black 10-Piece Knife Set with Block, Limited Edition with Ken Onion Knife Block Review

Wasabi Black 10-Piece Knife Set with Block, Limited Edition with Ken Onion Knife Block
Average Reviews:

This is a good set of knives, they cut very well and are nice and light weight. They seem to be a good quality set and they cut very well through about anything. They are a bit sharp to hold where the handle meets the blade and can dig into you while you use them. The knife block is of poor design in that the shears poke out the bottom and hit the counter top unless you let the shears catch the block on the rivet on the side of them. This is a major flaw in the block, so I recommend a small piece of cutting board or Plexiglas, etc under the block so you do not damage your counter.
Overall a good knife set, sharp, easy to use, attractive, and reasonably priced despite the uncomfortable grip and poor block design.

Made with the same exquisite quality and craftsmanship as the original Wasabi knives, this 10-piece set of Wasabi Black knives from Kai features Daido 1K6 high-carbon, stainless steel for superior edge retention and double-beveled blades on several of the knives--including the paring, utility, and chef's knives. This set includes 8-inch chef's, 9-inch bread, 6-1/2-inch Nakiri, 6-1/2-inch Santoku, 9-1/2-inch Yanagiba, 4-inch paring, and 6-inch utility knives as well as a pair of kitchen shears and a sharpening steel. An attractive bamboo block holds nine knives, sharpening steel and shears.
The Daido 1K6 high-carbon, stainless steel blade offers superior edge retention, and it will stay sharp when used against many materials in the kitchen like chicken bones. Graze-finished to produce a beautiful, brushed-look, each blade is embellished with the Japanese characters for "wasabi"--which translates to "harmony and tranquility." Tradition is combined with a uniquely modern handle that's made of powdered bamboo combined with polypropylene and is impregnated with an antibacterial agent for super clean food preparation. This wood block fits both Wasabi knives as well as Ken Onion knives, and its smaller footprint more counter-space for your kitchen.
While you're probably familiar with some of the staple knives in this collection, such as the chef's utility knives, it also includes several traditional Japanese kitchen blades. The long 9-1/2-inch Yanagiba slicer (which is single-beveled) is used by sushi chefs for filleting fish, and it's also great for use on other cuts of meat. The 6-1/2-inch Nakiri has a rectangular blade shape that can be used as a cleaver, and its super sharp edge is also handy for skinning tough vegetables. And the 6-1/2-inch Santoku knife, which is style after the classic Japanese cook's knife, has broad blade and especially sharp cutting edge that's great for cutting fruits and vegetables. This knife set is backed by a lifetime warranty. Dishwasher safe, though hand washing is recommended. Made in Japan.
What's in the Box Kai Wasabi Black 10-piece knife block set with 8-inch chef's, 9-inch bread, 6-1/2-inch Nakiri, 6-1/2-inch Santoku, 9-1/2-inch Yanagiba, 4-inch paring, and 6-inch utility knives; sharpening steel; kitchen shears; bamboo knife block

Sassafras Pizza Peel Review

Sassafras Pizza Peel
Average Reviews:

(More customer reviews)
When you purchase this item, make sure you either own or also purchase food-grade mineral oil, designed for conditioning butcher block and other wood kitchen implements. (I learned this by buying the wrong thing first: If the bottle says it's toxic or flammable, this is not the product you want! You can food-grade mineral oil online or possibly at your local grocery store.)
The peel will need to be treated with the oil before use. Don't substitute olive or other edible oils, as they will go rancid. Let the peel absorb all the oil it can (I did a few coats, rubbing it in with a paper towel). Then voila, you have a well-conditioned tool that won't dry out and crack. For the best care, as another reviewer mentioned, you'll want to apply mineral oil after you clean it each time.
This thing is big! My better half came up with a clever way of storing it inside one of our cupboard doors, as it's quite flat; I had thought to store it with the baking sheets, but its handle makes it a bit ungainly.
For the price, it's a great tool, and a little care will go a long way!

Lodge Logic Pre-Seasoned Saguaro Cactus Pan Review

Lodge Logic Pre-Seasoned Saguaro Cactus Pan
Average Reviews:

(More customer reviews)
My kids love these little cornbread saguaros because they love cornbread, everything about Arizona, and especially these statuesque desert sentinals. I bought the non-seasoned version of this pan last year and I'm still breaking it in, so the corn bread sticks a bit. I'm sure that the new pre-seasoned version will break in faster. Make sure to preheat the mold and grease it before putting in the batter and don't fill them too full. Enjoy!

Click Here to see more reviews about: Lodge Logic Pre-Seasoned Saguaro Cactus Pan

Southern chefs will tell you that nothing bakes cornbread like a good cast-iron pan, and this Lodge Logic cactus pan is among the best. The vessel features a series of five saguaro cactus impressions, each measuring 4-1/4 inches long and 2-1/2 inches wide. The cactus shapes are clever and precise, with a pair of arms that extend out and up in the traditional saguaro manner. Meanwhile, the batter cooks beautifully thanks to the cast-iron material, which heats slowly but evenly and holds its heat far longer than stainless and aluminum rivals. The resulting cornbread cakes and muffins are cooked to the peak of perfection, with slightly crisp exteriors and moist, flavorful insides. It's the perfect way to add a Southwestern touch to your chili and black-eyed pea recipes.
Unlike traditional cast-iron cookware, Lodge Logic pans come preseasoned through a proprietary "electrostatic" vegetable oil spray system. The preseasoning process readies the bakeware for cooking right out of the box, making it far more convenient than old-style cast-iron pans that required oil and oven seasoning before use. The timesaving process also generates a nonstick finish that helps preserve the bakeware for generations while crafting an attractive heirloom appearance. Lodge recommends hand washing the pan with a stiff brush and hot water for best results. The cactus pan measures 15-1/4 by 1 by 5-3/4 inches (W x H x D) and carries a lifetime warranty.

Staub 5 Quart Oval Cocotte, Black Review

Staub 5 Quart Oval Cocotte, Black
Average Reviews:

(More customer reviews)
I own the predecessor of this Staub pot, the same model but with a domed lid. I received it as a gift a couple of years ago. I am a serious cook-- have taken some culinary classes and enjoy cooking immensely. This pot is quite simply the best roasting pot I have ever owned. It is a very heavy cast iron pot which has been double coated with enamel. The lid and pot fit together perfectly. The craftsmanship is excellent. There are dots protruding from the inside of the lid that essentially channel condensed moisture (steam) back down as liquid onto whatever you're cooking-- sort of creating your own little rainforest in the oven. (You can also use the pot without the lid if you prefer dry heat.)
The design of the lid ensures moist cooking, which tenderizes meats. Cooking a whole chicken (and this pot easily accommodates a very large roaster) with spices and vegetables results in fall-off-the-bone moist, flavorful meat. Cooking a roast of beef or pork? Ditto-- the meat is tender, and the spices are roasted in. Vegetables more your style? This baby makes perfect stews, either on a stovetop or baked.
Best of all, if you season your pot correctly before you use it (instructions are provided), cleanup is a breeze. Just fill the pot with warm soapy water for 15-30 minutes and then wash with a nonabrasive utensil (so as not to scratch the enamel). Even the worst baked on sauces come off easily. Love it.
One word of caution: cutting anything with a sharp knife in your pot may ruin the enamel coating. It's okay to slice into something to test it as long as the knife tip doesn't hit the bottom or sides of the pot. To me, this slight trade-off of convenience is well worth it, given how well the pot works.

My buddy has a few chop keepers and he uses them from barbeque to chopping all kinds of fruits and veggies. He highly recommended it... So I decided to order some and try it out and I love it. There are several chopping boards on the market but none that have curved "up" edges, (at least none that I could find) which keep the juices and any liquid on the cutting board that is, until you are ready to clean it. I saw this product in a pampered chef order catalog, and I was intrigued by its functionality. My son loves "uncrustables", but I hate that they are filled with sugar, preservatives and never mind the price per unit. I purchased the item, and I LOVE IT! I am able to make various kinds of 'uncrustables'and freeze them for snacks, lunches and quick breakfasts. The one thing that I have noticed is that the product is hard on the palm of your hand (when you are pushing it to seal), but that is definitely a small concern in the grand scheme of things! This is worth every dollar!

George Foreman GR10ABW Champ Grill with Bun Warmer, White Review

George Foreman GR10ABW Champ Grill with Bun Warmer, White
Average Reviews:

(More customer reviews)
I've been watching George's informercials and regular commercials since they first appeared, and I've always been tempted to buy a grill. They were kinda pricey, so I never did. But then, I got one of the small grills with the bun warmer as a gift, and now... I AM HOOKED! I have every intention of buying the extra large grill as a result of the fun I've had with this one.
What you've heard about the grills is all true--they're really easy to clean, they cook food incredibly fast and evenly, and food really does come out as juicy and tender as the commercials show you. Tell you how good it works: I decided to grill skinless, boneless chicken tenders one night for dinner, but they were frozen solid, and I had a group of surly, hungry family members waiting. Just as a gamble, I put the tenders on the George grill to THAW them a little. Well, they thawed all right and were completely cooked in about 8 minutes. Color me surprised!
I've done steak, pork chops, chicken, and shrimp on this little grill, and with each use, I get better and better at gauging the cooking time. I do recommend that you use cooking spray to further the ease of cleanup because spices and marinades tend to blacken (or even burn) where the ridges press into the meat, and cooking spray will slow/stop that. As there's no temperature control on this model, everything cooks at max power, so time is of the essence in making sure what you're cooking doesn't blacken too much.
The bun warmer does just what it promises--warms. No worries about burning the bread because it doesn't toast; it just makes your breads nice and soft. I enjoy the color choices for the lid with this model--I think it's a fun little extra that gives some personality to a simple appliance (I recommend the purple). There's a spatula and drip tray included, and you'll find that the spatula is better used as a scraper than it is for anything else--it makes short work of removing stuck-on food, etc. You'll be stunned to see just how much fat drains away from your food.
If I had to come up with one negative point about the grill, I'd say this: it's not hard to burn yourself on it. The heated surface extends to the sides of the grill, so if you go to move the whole unit, it's really easy to char your fingers.
It's a great introduction to the George Foreman line of grills! The price is incredibly reasonable, and the machine works so well, you'll be glad you got one.

Global Sun Oven - Solar Cooker Review

Global Sun Oven - Solar Cooker
Average Reviews:

(More customer reviews)
My mother first sent me plans for a solar cooker when I was a Peace Corps volunteer in Kenya back in the 1900s, but being young and foolish, I preferred to walk an hour to town for kerosene to light my little stove. (Heck, I couldn't cook, anyway.)
Being much older and a little wiser, I finally woke up to the idea of solar cooking. A parent at the school I work at donated the money to buy a Sun Oven, and my science class fired it up yesterday. I had never cooked in a solar oven before, so I was fully expecting some initial failures, which would be disappointing but instructive. I figured if it could heat up water, we'd bake brownies. The kids (7th and 8th graders) were unusually motivated to see this thing work. Some boys who have never previously volunteered in class eagerly peeled off the protective coating from the reflectors. We set the box outside facing the sun, and it quickly heated up to almost 300 degrees. It easily passed the water heating test, so other students mixed together my favorite brownie recipe (from Baking Illustrated), and into the sun it went. An hour later it passed the toothpick test, so the students tucked into moist, delicious brownies at lunch! It exceeded our wildest expectations for our first solar cooking attempt!
Today I've been experimenting some more, and I've cooked some brown rice (I'll use less water next time), a small loaf of bread (nicely browned crust in one hour), corn on the cob (no water necessary!), and an encore of the brownies. Everything has turned out very well, and all it took was turning the box every half hour or so.

Euro-Pro TO251 Convection 6-Slice Toaster Oven with Pizza Pan Review

Euro-Pro TO251 Convection 6-Slice Toaster Oven with Pizza Pan
Average Reviews:

(More customer reviews)
[Update July 10, 2010: Rating downgraded to 3 stars and sinking: broken under warranty. Using their customer service webpage kicks back an email saying to email them, and then emailing them got an email couple of days later to call their 800 number. Haven't had a moment to call them yet but will report back.
As much as I like this thing, the controls have quit functioning, after only 7 months of use (initially stuck on high Grill, then wouldn't turn on). And, for those of us who do not live close to Toronto, warranty service is next to useless, because it costs $37.50 for me to mail it from my location internationally to Toronto, plus $9.95 that they request for return shipping and handling, plus the uncertainty that they will actually repair/replace the thing "if it is found ... to be defective in material or workmanship". I contacted customer service for a better solution (e.g. send me some replacement knob modules), but I don't know if that is possible or feasible -- stay tuned for updates. For the moment I am lowering my rating of this toaster to 3 stars because this is too soon to break, but I really like using it and want to give their customer service a chance, though they haven't yet bothered to respond to me (On June 26 I used their website contact page, and on June 30 I sent them email; and I have been checking my spam folder). I hope we can work out a more reasonable way to repair it. For the moment I've moved my old kenmore back into the kitchen -- it has lasted several years and counting, and was replaced only for cosmetic reasons.]
Original review (4 stars):
I bought this from Sears to replace my dirty ugly (but functional) old Kenmore toaster oven. I am pretty happy with it, but there are a few things about it that are not perfect.
I think this toaster oven is the same as many others out there. If you are shopping for toaster ovens, you will see that there are lots of different models and brands offering pretty much the same configuration of controls and features as this one. I suspect that they are all made in the same factory and just have different body styles and name brands slapped on to them.
Anyway, here are some of the features that I like about it:
- It has a "Stay On" setting, so if I am baking something that will take more than 60 minutes I don't have to keep turning up the timer to keep the oven on.
- It offers different cooking combinations of top heat, bottom heat, both, convection on and off.
- It has a bulge in the back ("pizza bump") so that I can put a 12 inch diameter pizza pan in it (one was in the box, but I prefer a pizza screen). Not counting the bulge, the interior is about 9" x 12". It is 4.75 inches from the rack in lowest position to the top heating elements.
- It came with a second rack so I can heat things on two racks at the same time if I want to.
- The stainless steel body means that I can scrub the body without having to worry about removing color (and it looks good)
A few flaws that made me contemplate returning it:
- The outside gets hotter than my older (Kenmore) toaster oven. I put a grill thermometer on the top, when baking at full temp, the top surface reaches 220, about 20 degrees warmer than my old Kenmore. I looked and there appears to be an air gap between the roof of the oven and the outside top surface, but I could not tell if there is any insulation in there. But that means it gets the kitchen hotter, and it provides a hotter warming shelf (plates now get too hot if left too long). [I have moved my ugly old toaster oven out to my patio, and if it is too hot to bake inside, I will bake out there instead.]
- The temperature dial goes down to 150 degrees, but when I have tested it with various cooking modes, the actual oven temperature didn't go lower than 200 in one cooking mode, and 180 in another one. I had been hoping to use this for things like slow roasting and food drying, but that is too hot.
- At the corners of the glass door, there are little cushions that probably protect the glass door from shock, but they also prevent the glass door from closing the whole way, so there is a gap of about 2.5mm to let the heat out (using more electricity and making the kitchen hotter). I haven't decided if this is a feature (perhaps it was felt that some air flow was needed) or a bug.
- If you pull the rack out more than one inch, the back is no longer supported so the back of the rack falls down, and what you are baking slides down to the back. This is a real design flaw, but I have just gotten used to the annoyance and hardly pull the rack out now.
However, in spite of these flaws, I find that I am really happy with the purchase and have enjoyed using its many functions.
Also, note that the ridiculously huge dimensions given in the Amazon listing (at the time of this writing) are the size of the box, not the toaster oven itself. The toaster oven is 17.75 wide x 10.25 tall x 13.5 deep, not counting little bumpers which stick out of the side and back about a half inch to prevent it being pushed too close to walls.

I purchased these knives after having purchased and returned mundial steak knives that had great blades, but the black plastic handles faded after only one hand washing. These knives have serrated blades and are fine for cutting steak on a plate, and I don't think I would want steak knives to be any sharper than what these are, because if so, they would damage my dinner plates. You aren't supposed to wash them in the dishwasher, but I have several times now and they came through as good as new. The rose wood box is nothing special, but it's okay. Overall, for the price, I'm quite happy with these knives.

The Original Cooking Thermometer/Timer by ThermoWorks Review

I read the Cook's Illustrated magazine review. They rated this number 1. I called Thermoworks to ask about the probes. They said they are NOT "sometimes defective". But, over time heat and moisture can damage them. Or, if you let the cable rest against a heating element it will burn through the cable. So I got an extra probe. The price is fair. But still haven't needed it. I also asked about Polder. They said it is actually the same thermometer internally and made by the same factory in China. But they said they are not associated in any way with Polder. I've had mine since last Thanksgiving and I use it at least once a week in the oven or on the BBQ. It's easy to set and at this price I figured it was such a low risk. Since then I've decided its one of the best values in my kitchen. I also have the Thermapen - much higher price. Both work great. -- By the way, don't use the polder replacement probes. The one I tried was not accurate with this unit. Get the correct thermoworks one - TW362XX.

The TW362B has a robust design and a slide switch so the unit can be powered off. The well-loved simplicity means you won't need to find the instructions each time you set an alarm. The stylish housing folds the display up for counter use or flat for less obtrusive magnetic mounting to an appliance door. This is a huge kitchen favorite in commercial and home kitchens as well as industrial and lab use. Buy several for the kitchen, the BBQ, the RV, the vacation home or as gifts for friends.

Lid was a very different color from the bottom and the lid and bottom together did not in any way, shape, fashion or form, come close to even a reasonable fit.

Lodge Logic Camp Dutch Oven Review

Lodge Logic Camp Dutch Oven

People seem to either love, hate, or have total disinterest in cast iron cookware. I love it. It seems to have a lot more soul than "modern" utensils.
I've been reading "Little House on the Prarie" to my daughter and she enjoyed hearing how the Ingalls used a pot just like daddy has.
This dutch oven is quite versitile. I can use it with campfire coals, with charcoal, over my Coleman campstove, or in the oven at home. The legs are too long to use on my rangetop at home (without risking damage to the range surface).
Dutch oven cooking is an acquired skill (on top of the general cast iron learning curve), but I've had no problems so far. I have mostly used it to make chicken or beef stew when camping.
Once you get hooked on dutch ovens, then you start wanting accessories. I use a charcoal chimney to start the coals, a pair of metal tongs to move the coals around, and a metal oil drain pan to contain the coals. I've just ordered a Lodge lid lifter, lid rack, and leather gloves to make the whole process a bit easier and safer.
I'm also already thinking of my next dutch oven. It will be the "deep" 8 quart. The 4 quart being reviewed here is 10" diameter at the lid and 3-1/2" deep. The "deep" 8 quart is 12" at the lid and 5" deep. (The standard depth 12" oven is 6 quarts, the standard depth 8 quart is 14" diameter). For soup or stew I like to leave some space below the rim so I probably only get 3 quarts in the 4 quart model, while the deeper 8 quart model would allow a greater percentage of the volume to be used. I imagine for bisquits or other baked goods the standard depth is probably fine.
