KitchenAid KHM5DH 5-Speed Ultra Power Hand Mixer, White Review

KitchenAid KHM5DH 5-Speed Ultra Power Hand Mixer, White
Average Reviews:

(More customer reviews)
Prior to buying this hand mixer, I always seemed to end up cooking in qalley type kitchens, without the counter space or storage for a stand mixer. Plus I seemed to burn up the motors on any hand mixer I ever bought. I thought I simply asked unfair performance from hand mixers. About the time I burned up the motor in my third hand mixer I saw an ad in a cooking magazine for the then new to the market KitchenAid hand mixer.
So I went out and checked it out. Here are the reasons I bought this hand mixer: a) it was made by KitchenAid; b) it looked like it was easy to clean; c) When compared to the more expensive model with additional speeds, I thought the five speeds would meet my needs; d) It had a "nice feel" to it - it was light weight yet seemed substantial, and well built and well designed.
I have used this mixer ever since, I think it's been about four years (maybe longer), and it has always lived up to my expectations. The five speed model when I bought mine did not come with a dough hook attachment, so I cannot speak to its ability to handle yeast dough; however, it has unfailingly whipped and mixed every concoction I've put it in without any signs of strain. It is easy to clean with its seamless design, as the editorial points out. I enjoy using this mixer, and highly recommend this mixer as a very well designed basic, efficient, and reliable hand mixer.

just got my pan and it wasn't as I expected. from handle to handle is 13 inches but from the description I thought the inside actual pan part was going to be 13 inches so it was much smaller then I wanted.
still a nice pan just take note of the pan really being 9.5 inches inside

Norpro Marble Pastry Roller Review

Norpro Marble Pastry Roller
Average Reviews:

(More customer reviews)
I had the all wood Norpro 3078 and I loved it because the handle was longer and fit my "Man Hands". The 3078 has cast aluminum on each side of the wooden grip to hold the rollers which make it longer and easier to grip. I have I admit I've kind of abused it. I left it soak which I know makes the wood swell and eventually the wood cracks and discolors. So after I ruined the one I had I thought I'd step up to the Marble Roller.
The Marble roller seemed better for many reasons I could neglect it and not worry about it being ruined, it is heavier so it would have more weight to roll the dough out, the marble would not stick to the dough and there are no pores that the dough could get into. I was correct about all of these assumptions but there are flaws other than the small handle that I didn't like. The first thing I noticed is the wire that holds the rolling pins to the handle were bent so the rolling pin was crooked, I bent that out. The next thing i noticed is that the bushings on the side of the marble rolling pins fall out all of the time, I guess I could have epoxied them on.
I gave this one up and just bought a new 3078 again. I just take better care of so it lasts longer than the previous one.
P.S. I've noticed Amazon shows two different versions of the wooden roller with the same item number. there is the longer one like I've mentioned and a short version that looks like this marble one.

Mario Batali The Italian Kitchen Collection Pizza Peel Review

Mario Batali The Italian Kitchen Collection Pizza Peel
Average Reviews:

(More customer reviews)
I've only had this a short time and I like it a lot. The price is good and the quality is good. The handle is clamped to the blade by a large wooden knob which screws on from beneath. You can loosen the knob to fold the handle or even remove the handle completely (nice for putting the blade in the dishwasher). The way it's designed though the knob attaches on the bottom which makes it so that the Peel can't be laid flat (the knob sticks out quite a ways below the blade). This can be fixed by putting the handle on upside-down and screwing the knob on from the top. Having the knob on the top isn't too bad, but I wish the handle was simply designed to mount with the knob on top so that it looks nicer when attached that way.
Update 9/8/2009: It's been a year and a half now and I'm still happy with this and wouldn't change anything in my review or rating. I still wish the handle was a better design, but it isn't bad and it's "fixable" as I mentioned in my original review.

Taylor Digital Measuring Cup and Scale Review

Taylor Digital Measuring Cup and Scale
Average Reviews:

(More customer reviews)
Received this item yesterday. I was a bit skeptical, but I measured out water in my regular glass measuring cup and then poured it into the Taylor Digital measuring cup and it was accurate. I repeated this experiment several times using different amounts of water. You do need to put it on the water mode. (Simple to do)
Next, I put it on flour mode. I measured out one cup in a dry measuring cup. I tamped it down quite hard and it measured 1 1/8 cup on the digital scale. I thought "Oh NO!". But I realized I had tamped it down too much so I re-measured in the regular dry measuring cup and then dumped that in the digital and it measured exactly at 1 cup.

Just to be clear, I measured items first in regular dry and liquid measuring cups to just test the accuracy of this item. Now that I am satisfied that it is accurate, I will just measure only with this digital scale (not measuring in other cups first).
I think this is a great idea. It has the water mode, oil mode, milk mode, flour mode, sugar mode and a regular digital scale mode so you can measure whatever you want in this cup.
This item turns off automatically after 5 minutes if it is not being used.
I like the easy to read aspect of this. Having older eyes, it is easy to read.
I would definitely recommend this digital measuring cup. It is a good size. Probably would handle any measuring job you would have.
11/08/09 - updated. I love this digital measuring cup even more than I did when I first received it in September. I have now figured out that this has a TARE function so that you can measure one item in there and then tare out the measurement, add another ingredient (and it will measure only that new ingredient) and you can keep adding in more ingredients into this one large measuring cup. It is very handy. No more countertop full of dirty measuring cups. Then I just stir it all up in the cup and pour the batter into a baking pan. Could not be simpler.
Also, you can hold down the on button for several seconds and it will automatically turn off the digital scale.
Love this item!

Back to Basics 555 Grain Mill Review

Back to Basics 555 Grain Mill
Average Reviews:

(More customer reviews)
I've had this grinder for MANY years (about 12 I think). I don't use it real often, as it is slow work. I use a NutriMill electric grinder for my everyday flour grinding. But when we want corn bread or cream of wheat or rice, this hand grinder does the best! This meal does a great job of making a true course corn meal and farina/ "cream of ..." cereals. (You'll never want cornbread with storebought cornmeal again, once you've tasted fresh ground.)
For those things that don't require a large amount of grain meal, and that you don't do everyday, this is a great mill. For daily grinding of flour for several loaves of bread - I wouldn't do it.
Another reason I like having this on hand is if we'd ever be out of electricity, and I couldn't use my NutriMill.

Designed with self-aligning, cast stainless-steel cone-shaped grinding burrs, the compact Back to Basics Grain Mill outperforms larger, heavier hand grinders. It is precision machined to ensure long life and smooth, even milling. The grinder mounts easily to a countertop or table, secures with a clamping screw, and performs efficiently without the use of electricity. Fill the 2-1/4-cup grain hopper and turn the crank to grind. Overall, the grain mill measures 12 by 2 by 5 inches, with rubber pads to prevent scratching and marring. It stores easily in a drawer or cupboard and comes backed by a 2-year warranty.

This is a great idea in concept; however, it's not so great in execution. I got my set less than a week ago and tried to use them for the first time today.
The 1/2 tsp/1 tsp spoon is already broken. The cup of the spoon detached while I was scooping up cinnamon.
I didn't keep the receipt, which was my fault. A search for the maker's website has proved fruitless. This is money I will never get back.
I could have gotten a traditional set of spoons for less money. If I had, I wouldn't need to spend more money on yet another set of measuring spoons.

Oster 2534 Inspire Handheld Mixer with Bonus Attachments Review

Oster 2534 Inspire Handheld Mixer with Bonus Attachments
Average Reviews:

(More customer reviews)
The biggest issue for me is that the retractable cord is quite short - probably about a foot long - so I can't hold the mixer at a comfortable angle even when I'm working right in front of an outlet. What's more, the lowest setting is much faster than on any other mixer I've used. I've gotten into the habit of whisking by hand until a mixture is fairly thick before turning to the mixer. Even then it's still fast enough to make a bit of a mess, so I usually just finish by hand to save the trouble of having something else to wash up. Lastly, the eject button isn't actually a button, it's just an area of plastic with a logo on it that you're supposed to run your thumb down to release the beaters. It's creaky and feels flimsy, and it doesn't usually let got of the beaters until you try it a few times.
On the upside, the unit has a nice heft, the rubber grip is comfortable, and the switch feels solid. The negatives outweigh the positives for me, though, so I'm going to keep an eye out for something better.

Bond with the kids over a batch of brownies or make a birthday cake for a friend--this versatile handheld mixer, appropriately named "Inspire" comes loaded with features to bring inspiration back into the kitchen. Choose the chrome beaters for conventional mixing of all types of batters, the dough hooks for bread or pizza dough, the whisk for infusing air into egg whites or whipped cream, or the drink rod when blending fun party drinks. Other thoughtful design details include a retractable cord for compact storage; an ergonomic handle to ensure a secure, comfortable grip; and dishwasher-safe parts for quick cleanup. Epicurean 23-by-14-Inch Pizza Peel Review

Epicurean 23-by-14-Inch Pizza Peel
Average Reviews:

(More customer reviews)
This peel costs about twice as much as aluminum peels, and about 50% more than wood. I think it's worth it:
1) Smoother than wood so the pizza slides easier. I was afraid aluminum would scratch my counters.
2) Dishwasher safe / NSF approved
3) Much lighter than wood - my wife can easily sling a 14" pie with it.
4) Much thinner than wood and short handled design means it stows more easily - space is at a premium in our kitchen.
5) Looks nice - we serve right off the peel - The aluminum ones don't look as nice and typically have long handles which can be a hazard when serving.
I have to admit that at first I felt the price wasn't justified as it's an "engineered" material. After using it for a year it's clear that the material they use is very good. Some reviews mention a chemical smell. I'm very sensitive to these smells but have not been able to detect any. Perhaps they got a bad batch? Note: I've never run it through the dishwasher, as it really doesn't fit.
We've been making homemade pizza once a week for several years. Here are my top tips:
1) Check out "Good Eats" Season 3 Episode 9 "Flat is Beautiful" for an instructional video. YouTube is your friend.
2) A Pizza stone is best and the only way to get super thin crust pizza (my favorite) I have a traditional stone, my sister uses a cast iron griddle as a "stone" with excellent results. Pan pizza in a cast iron skillet works really well too (no peel or stone needed) - use oil with no cornmeal.
3) Use the hottest setting on your oven (ours is 500F)and pre-heat for AT LEAST 30 minutes. I checked with some pizza shops and they are all > 650F. This gives a crispier crust without burning the cheese. You want the stone in one of the lower racks - not the top rack.
4) Brush or spray a thin layer of olive oil on top of the crust before the sauce. This helps keep the crust from getting soggy.
5) Corn meal only - no oil - on the bottom. Get stuff which is fairly coarse. It acts like little ball bearings. Something like Masa Harina is too fine. No oil - it will smoke and set off your alarms. If your smoke alarms tend to go off, crack a window in a different room and turn on your kitchen exhaust fan.
6) Build your pizza directly on the peel. No matter how much corn meal you use you will not be able to slide the peel under smoothly if you build the pizza on the counter.
7) Give your peel a good shake to confirm that the pizza isn't sticking before you put the toppings on (After the sauce and cheese). If it's sticking at all, use a spatula to lift up the edges of the pizza and put some more corn meal down, then shake again. If you have to shake it hard after you've put the toppings on, they will get all over the place.
8) You can make pita bread with any extra pizza dough. Roll it out super thin (~1/8") and throw onto a hot stone. Check it in 2 minutes or so and flip over after it has puffed up. Be careful, they cook VERY QUICK!
We use the Kitchenaid stand mixer pizza dough recipe, but double the salt and olive oil. Alton Brown (Good Eats) also has a great recipe (note - he calls for Kosher Salt, which is less dense than table salt - if you use a tablespoon of table salt, it will be too much)
Bon appetit!
If you've found this review helpful, please let me know!

Every professional or at-home chef knows the importance of a good cutting board. Whether mincing herbs or chopping carrots, onions, and potatoes to throw into a vegetable soup--or even slicing cantaloupe and watermelon for a fruit salad to serve at a barbecue or summer picnic, a high-quality cutting board helps ensure safety, efficiency, and convenience. Epicurean has developed a cutting surface that delivers all that and more.

Features
Dishwasher-safe: unlike wood and bamboo cutting boards, Epicurean cutting surfaces are high-quality food-prep surfaces that can be cleaned in the dishwasher.
Made in the USA: Epicurean cutting surfaces are exclusively manufactured in the United States of America.
NSF Certified: certified by the National Sanitary Foundation, you can be sure that your nonporous Epicurean cutting surface will be easy to clean and will not harbor bacteria.
FSC Certified: Epicurean's Natural, Slate, and RC100 materials are all certified by the Forest Stewardship Council.
Knife Friendly: Epicurean cutting surfaces will score slightly as to not dull your knife so you will sharpen less.
Heat-Resistant: Epicurean cutting surfaces are heat-resistant up to 350 degrees F (176 degrees C), so you can use the surface as a trivet without leaving a blemish. (Not microwave-safe and should not be used as cookware.)

Innovative Design A smart and practical alternative to poly, glass, and wood cutting boards, the cutting surface features compressed layers of environmentally friendly, nonporous wood fiber composite from trees harvested under guidelines of the North America Sustainable Forestry Standards. In fact, the materials are also certified by the Forest Stewardship Council (Slate, Natural, and RC100 only), and they are National Safety Foundation (NSF) approved (Slate and Natural only), which ensures an easy-to-clean nonporous design that will not harbor bacteria.

The wood-based cutting surface provides a natural look and texture, and it comes in a variety of different earth-toned colors. Each color depends on the combination of fiber sources, which are layered together and pressed along with a food-safe resin to form a highly functional food-prep surface. Over time, the color of the material will develop a richer, more enhanced hue.

Knife Friendly Unlike other surfaces, cutting on the wood-based cutting surface won't dull kitchen knives. The surface will score slightly to help protect the knife's edge, which means less need for re-sharpening knife blades.

Daily Convenience The cutting surface offers a low-profile design that slips neatly into vertical or horizontal cupboards for space-saving storage between uses. The cutting surface might be best left out on the counter--whether tucked behind the cookie jar or under the basket of fruit--for quick, everyday access. Both sides of the unit work equally well for food preparation--the board can also be used as a serving tray when offering cheese and crackers or other hors d'oeuvres to guests at a party. Furthermore, the board can be used as a trivet on a dining table or buffet to prevent pots and pans for damaging surfaces. The unit can withstand heat up to 350 degrees F (176 degrees C), but it should not be used in the microwave or used as cookware in the oven.

Use and Care The cutting surface offers a durable design that can stand up to the rigorous daily use of any busy kitchen. It resists staining and cracking and offers maintenance-free convenience--no need to oil or bleach. Though stain-resistant, the cutting surface may stain if left in contact with a highly alkaline product or food for a prolonged amount of time. Liver, papaya, and red beets, for example, may leave a mark. To remove stubborn stains, try a non-abrasive household cleaner.
Made in the USA, the cutting surface can be cleaned in the dishwasher (unlike wood and bamboo cutting boards) or by hand in the sink with hot soapy water. As with any wood product, be sure to dry the cutting surface completely and store upright when not in use to avoid warping. Original, attractive, and functional, the cutting surface offers exceptional convenience to any home or commercial kitchen. Choose from a variety of styles, colors, and sizes.

I have been baking professionally for five years and although these sorts of lames may be useful for someone who wants to experiment with a loaf of bread a night for one week and then never bake again, one blade does not last half a shift in front of my oven before getting dull. A much better solution is to buy a package of double-sided razor-blades. We use Dorco brand which are 12 dollars for a hundred on amazon, although I'm pretty sure all brands are identical. They can be very easily fitted onto just about any rigid stick, such as a popsicle stick cut in half length-wise. Just thread the stick through the two larger holes in the middle of the razor blade so that it forms a convenient curve between them. Voila!
